The sausage meat Carassai is unique in that in the flesh of the ground which forms the dough is made, in addition to the usual flavors, even ham ground. It is celebrated mainly during the famous Festival of the sausage on the grill, where the sausage, cooked quickly on the grill so that it does not dry out, is served ‘chops’ with fresh bread and traditional side dishes of the gastronomy of the Marches.
